Broccoli Tortellini Salad

Over the years, I’ve seen plenty of versions of this salad—but this is the one I keep coming back to. Is it the healthiest salad on the table? Hmmm... maybe not. But let’s be honest—calories don’t count at summer gatherings, right? And besides, your guests will be too busy devouring this delicious dish to worry about it anyway. Bonus: It’s easy enough to whip up in about 30 minutes (this doesn’t account for time to cool)but it makes it a total win for last-minute get-togethers

Ingredients
  

  • 6 - Slices bacon
  • 20 oz. - Fresh cheese-filled tortellini
  • ½ C - Mayonnaise
  • ½ C - Sugar
  • 2 tsp - Cider vinegar
  • 3 - heads fresh broccoli cut into florets
  • 1 C - Raisins
  • 1 C - Sunflower seeds
  • 1 - Red onion finely chopped

Method
 

  1. Place bacon in a large, deep skillet. Cook over medium heat until evenly brown. Drain, crumble and set aside.
  2. Bring a large pot of lightly salted water to a boil. Cook tortellini in boiling water for 8-10minutes or until al dente. Drain, and rinse under cold water.
  3. In a small bowl, mix together mayonnaise, sugar and vinegar to make the dressing.
  4. In a large bowl, combine broccoli, tortellini, bacon, raisins, sunflower seeds and red onion. Pour dressing over salad, and toss.
